So you want their profiles to require moderator approval again following an upgrade?
I think you're effectively doing this backwards. Trying to use subscriptions as profile type an then requiring fields for that profile type, but a profile type field and then condition fields and plans would solve your issue as then changing their profile type would mark the fields you're wanting completed as required. I can try and suggestion other things depending on what you're trying to accomplish exactly.
