One question. Looking at the plan in it's tab, it does not include any way to pay. When does the system ask for payment? At the end of filling in all the fields in each tab of the profile or at some other point?

Payment is collected after registration since CBSubs requires a user object to collect payment. So once they click sign-up they'll be sent to CBSubs for payment. If you've user approval enabled you can also configure your plans to collect payment after they've been approved (see Workflows tab of your plans).
