CB Query Field provides a Query Select fieldtype that builds its options available from a custom database query. In your case they'd just be registered users with "Sign Up as" set to "Lawyer" and you'd query for all users with that value and display a list of options based off the results of your query. There's no other way to do it beyond manually adding each user anytime a lawyer registers.
