Seems I remember being able to sort the inbox by message title in the past, but now we can't. Is there some way to do this? A setting or something? We tried all available templates in V2.5.

Have you enabled sorting in uddeIM backend?

yes - the "From" and "Date" columns are both sortable, but not the "Message" title column. It is the "Message" title column that we want to sort.

The message column was never sortable. Didn't see that you asked for the message title.
