I am having difficulty stripping out |*| when a field values are displayed in another fields "Profile Value Layout". I have tried several php code snippets to no avail. I have run out of ideas as to how to fix this. Is there a way or must I just have to live with keeping the fields displayed separately?

Looks like you're using [FIELD_NAME] substitutions. Those will always output raw database values. If you want it formatted be sure to use [cb:userfield field="FIELD_NAME" /] substitutions and you won't have the |*|. See the below substitution tutorial for further usage information.
