Enable debug mode and maximum error reporting in Joomla global configuration then retry to see if any errors output. If none and if SEF is enabled then disable SEF and retry. If still no errors outputting check within your servers error log to see if there's any fatal errors around the time you attempted to update your profile. If still no error output you'll need to start turning things off 1 by 1. I'd recommend starting with any 3rd party system or user plugins in Extensions > Plugins to ensure something isn't acting on Joomla store events and interrupting CB.
