Do you know any CBSubs compatible invoicing extension?

I'm not aware of any, but there are a lot of reporting extensions that can function off database queries. in theory you could write a database query to output whatever CBSubs information you want and have said reporting extension output it into a formatted table. Custom phpmyadmin query then output the results to CSV could also work.

I don't know how to build queries for the tax and promotion calculation, unfortunately.

You shouldn't have to. The calculated price is in _cbsubs_payment_baskets as mc_gross or payment_gross. Tax is also there stored in tax column.

As far as I can see mc_gross is the full price, my payment_gross is empty, where is the discounted price?

When is the discounted price calculated? Is it as soon as the promotion is created?

mc_gross is the total price they've been charged. It includes taxes and I believe also promotions. All the basket information is directly in that table.
