I would like to have a small notification from CB Workflows to let me know when there are approvals to be done but I would like it to be hidden when there are no notifications. Rather like the icon which pops up to show new messages on a phone, a menu item that appears as "Approvals Pending" in red only when there are notifications in the CB Workflow module.

Is this possible?

CB Workflows Module doesn't display if there's nothing to display. The module will output as empty and Joomla won't render it if that's the case (unless your Joomla template has overridden this behavior). The module simply displays a link to the approval page. You can customize this further using Joomlas built in layout override functionality to provide a custom layout for the module.
