I find it hard to find on the forum or in the online aids the way to slightly increase in height the fields of the drop-down lists.

It's entirely CSS driven. Your Joomla template is likely changing the font-size or line-height resulting in it displaying like that. You'll need to right click and inspect element on the dropdown then review its CSS to see what's doing it.
