It should be only CB login fields. Which you control (as much as possible) from the CB fields in the admin backend area.

See number 3 in particular there. You want to enable CB login and disable Joomla. Then edit the fields you want to use via the fields editor.
Note that certain fields are core system fields and can't be disabled. I've never attempted what you want to do, so no idea if you will be able to work around the core fields.
