Adding more information to profiles requires adding more fields to it which you can do within CB > Field Management. That description would likely be a Text Area or Editor Text Area fieldtype.

I'm looking through the documentation, and maybe I'm looking right at it, but is there a way to keep users from editing their profiles?
Or, to moderate any changes they make?

You can make field readonly which means that an admin will have to edit from backend.

I'm not sure if I'm editing the wrong thing or not, but I can't seem to get the edit profile option to go away.
