Don't understand why you'd need that. The date and datetime fields have a calendar already. Click the calendar icon to the right of their dropdown inputs. At any rate you can add custom JS to the header of the registration and profile edit pages using CB Auto Actions and a Code action on the onBeforeUserProfileEditDisplay and onBeforeRegisterFormDisplay triggers.

jalali year is not equal gregorian year number
for example 2018 in gregorian =1397 in jalali

You can fully translate the calendar CB uses using language strings. The language override function should have no issue finding them. Examples as follows.

Key: UE_WEEKDAYS_1
String: Sunday

You can also change the first day for the calendar using the UE_CALENDAR_FIRSTDAY language string. Beyond that I can't really provide any further suggestions.

CB isn't designed for Jalali calendar with no plans of that changing. PHP it self does not handle Jalali date usage either so none of our date handling will work for Jalali usage.
